VINIFICATION


Grape cluster thinning, hand- harvested and placed in 10 kg grape boxes by mid august.

Whole grapes are destemmed and pressed after maceration that last 3 to 5 hours at 15°C; after light clarification, must inoculation takes place with selected yeast from Champagne for the beginning of the fermentation process, at 18°C in stainless steel tanks for 10 days.

It ages for 2 months in stainless steel tanks; malolactic fermentation is not totally finished. At the beginning of December of the same year of the harvesting, it goes through fermentation sur lies for at least 9 months, with manual remuage su pupitres, degorgement, and sugar at 16g/l is added to transform it in extra dry style.

Organoleptic Characteristics

A classic method that combines the precious notes of pastry and bread crust coming from maturation on yeasts and the typical freshness of freshly picked grapes: it has intense pink color with orange reflections, soft and elegant with notes of ripe fruit such as cherry. Fine and persistent perlage. At the palate is nicely balanced, fresh and young without missing a challenging background
